Tiki Oasis starts today! I’m in the middle of doing final preparation for my symposium this afternoon, The Bitter Side of Tiki. Since tomorrow (August 16) is National Rum Day, I thought I’d get a jump on things and share two of the rum recipes I’ll be making in my class today: the EPAC Grotto Punch and a Rum Old Fashioned using aromatic bitters made in class using nitrogen cavitation.
EPAC Grotto Punch
1.5 ounces Ballast Point white rum (or other flavorful clear rum)
3/4 ounce fresh squeezed lime juice
1/2 ounce fresh squeezed white grapefruit juice
1/2 ounce Campari
1/2 ounce falernum (home-made)
one dash grapefruit bitters
one dash Angostura bitters
Shake all ingredients with ice, then pour the entire contents of your shaker in a double old-fashioned glass. Garnish with a grapefruit twist.
Rum Old Fashioned
1.5 ounces Ballast Point aged rum
one bar-spoon cane syrup
one dash class-made nitrogen cavitation aromatic bitters
Stir with ice and add a lemon twist.
